Rough Rider Chili

Josephine’s Feast Rough Rider Chili is the most flavorful chile blend with just enough heat to create a true authentic chili flavor.  Inspired by Theodore Roosevelt and his Montauk trained Rough Riders this chili satisifies a crowd.  The mix has the intense sweet flavor of New Mexican roasted chilies along with a balance blend of spices and classic hot chili for an exceptional flavor. As we do not add salt to our spice blends and rubs we suggest that you add Natural Sea Salt to your personal taste.  See our Salt notes for more information

Our recipe is as follows:

Sear quickly 2 pounds of had cubed beef (from the sirloin)  in a dangerously hot frying pan containing 2 to 3 T of olive oil or bacon fat (for the fearless ).

Drain with a slotted spoon and season with Natural Sea Salt and Butcher’s     Grind Black Pepper.  Set aside.

Mince 2 to 3 cloves of garlic

Dice 1 large or 2 medium onions

Add 2 T of olive oil (or bacon fat for the fearless) to a pan and on a medium heat saute the onions and garlic

Add the beef in small batches alternating with 2 to 4 T of Rough Rider Chili Mix

When all the meat is coated add one 16 oz can of crushed tomatoes.  Purists can crush whole canned tomatoes.

Test for seasoning and simmer for 45 to 55 minutes

We always think Chili is best the next day – keep that in mind. This can also be used a mix of pork and beef or ground turkey.

We also like this rub in beef stew, on pork chops, barbeque ribs, grilled salmon, and omelets
